    You can make good tips most of the time with high class customers.

    Cons

    They would rather the customer get great service and the server make minimal money than allow a server to run a full section.

    Appreciate your servers and give them 4 table sections and train your host. Lower to share

    Pros

    Great People - Worked with some of the best people in the industry.
    High Standards - Best practices and oversight ensured excellent execution when it came to food.
    Community Involvement - Focus on giving back, charity events, and schools.
    Empowerment - Simple directive: don't let a customer leave unhappy, do whatever necessary.

    Cons

    Lengthy Management Training Program - Expected managers to be experts in all areas of restaurant, and able to perform any position. Six months or more.
    Long Hours - Workdays of 11 hours or more. Witnessed one assistant manager work a 70-hour week.
    Rigidity - Belief in the superiority of their brand and food extended too far, into their training programs and personnel decisions, which both need some improvement.

    Advice to ManagementAdvice

    Having high standards is great, but adapting to working conditions is equally important. With such a lengthy training program, you failed to fill the vacated positions fast enough to prevent managers from leaving the company because of the undue stress and burdens placed on them while shorthanded. Build a program that teaches the vital information first, then allows additional knowledge to be gained while working as a manager. Most of the people you hire for front-of-house management will not be trained chefs, and asking them to be proficient at kitchen positions is both unnecessary and assuming. Regardless of how passionate a person is about the food or the people does not necessarily mean they want to work in a kitchen for six months, 55 hours a week, and expecting them to be good at it is downright moronic.

    Pros

    Management was laid back and staff was easy going. Everyone got along with each other and it was easy to work the ours out wanted

    Cons

    Business was slow a lot of the time so you had to work a lot of hours to make money. Also some of the corporate changes made it very difficult to make money

    Scheduling and ability to get time off when needed. Cash in hand business

    Cons

    Corporate chain that cares more about their bottom line then anything else, employee moral and money making is not a concern or theirs. It is a Dog eat dog business you have to look out for yourself. Must work holidays and weekends with little regard to what may be going on in your personal life.

    Pros

    flexible schedule, I had the opportunity to work with a few that know what Carrabba's was & should still be & that made me stay as long as I did. While our store management had their flaws, which I blame corporate for most of the flaws, I did enjoy working with most of them.

    Cons

    Corporate makes too many changes, most with little direction or explanation. This only added to the already stressed management which by nature trickles down the chain. Management faced with some unrealistic goals and no excuses accepted for failure to meet or "exceed" those goals. Not the same company I started working for and most of the people I worked with, from store mgmt, JVP, RVP, all the way up to the corporate level that had been there for a long time have "moved on to pursue other opportunities" code for they didn't like where the company was headed and quit! Corporate, the "new" corporate, is only worried about the bottom line, just like Olive Garden, Chili's, Macaroni Grill. Just get people through the door with coupons and specials and the money will pour in...NOT. This only brought in the customers who are looking for something for nothing, which now they usually get. Doesn't it say something when the founding owners, Johnny & Damien will have nothing to do with the corporate restaurants anymore. I guess it was good while it lasted. Carrabba's is no longer a stand out from all the rest.

    this is pretty much a waste of time. Corporate is convinced that their way is the right way and there will be no other way. Hopefully they don't let Carrabba's get too far away from their original principals & beliefs that they can't go back. Afraid that might be too late.

    Pros

    It is a scratch kitchen , everything made fresh. Company is expanding and has opened 3 restaurants in a year.

    Cons

    Cleanliness was a big factor and old equipment in the older restaurants that need a remodel. Lots of employees with tenure have left the company to pursue other avenues. Basically they did not like where the company was headed.
