Interviewed Sep 2009 (took 2 months)
Typical interviews will be first by the recruiter, who won't actually have a lot of technical knowledge.
Then you're CV will be forwarded to the hiring manager, who will screen and shortlist. That manager (who is the person you will likely report to eventually) will initially have a phone interview to sound out your relevant technical skills and get a feel for for you. This will then proceed to a 1:1 in person interview with that manager and possibly others from other teams you would be working with. This is the most important interview - generally they want to see you can handle yourself and work autonomously - so be intelligent, confident, honest. Ethics are a big deal. You will prob have a phone interview with the 2nd line manager at some point too. Finally you will need to pass a police check, and then you will get an offer. The offer will likely be below industry standard, and they tend not to negotiate much on $$$. This entire process usually takes several months.

Interviewed Aug 2009 in Cupertino, CA (took 2 days)
*This Interview process is for a contractual position only.
I was contacted by a staffing agency representing Apple for a 6 month to long term opportunity. I've expressed doubt regarding the years of experience (5-7) for the req work, where as i have only 3-4yrs of experience. Recruiter has shown confidence in my resume citing Apple measures "quality of work" rather than "years of expertise". There's a phone interview with hiring manager and a in person conversation/interview about where do we stand on the project. The interview process was quick, conversational and yielding.

Interviewed Oct 2007 in Reston, VA (took 5 weeks)
A little over complicated. The hiring manager had way too many people involved in the process. Also, the process took way too long. There was a delay of almost 2-3 weeks between the last interview and hearing anything from the recruiter. They really shouldn't leave people hanging like that, however, all worked out well in the end, so no complaints.
