Always take this as an opportunity to perform a length braindump of ever single thing you have ever learned about IT systems implementations and project management. Focus on the names of specific methodologies (Waterfall, Agile), Functional Specifications (Use Cases, Sequence Diagrams, User Stories), Types of Testing (Unit, System, Integration, Performance, Black box, White box, Smoke). Regarding management, make sure you talk about scope, schedule, cost, and quality. Talk about tracking and managing issues and risks. Talk about approproiate executive sponsorship and stakeholder involvement early and often. There is a high likelihood that the person you are talking to does not have any in-depth experience with these things but is probably aware of the terminology and what it represents so they will think you know what you are talking about. Smile a lot, joke around with them, they really appreciate a "sales-ee" demeanor. Sound somewhat pompsous and self assured or they will think you will not fit in (which you wont).
