Interviewed Nov 2011 in Tokyo (Japan) (took 2 weeks)
As I am a student in America, but was interviewing for a Tokyo position, most of the interviews were over the phone. They were very simple "fit" interviews asking about my experiences at school and on teams.
I then visited reps at a job fair who worked in the Tokyo office. They took all of the candidates, both interns and full-time, out to a fancy dinner. I suppose the dinner was again to see how we interacted with each other and with the reps...again, "fit" stuff.
Last interview was a pretty formal interview with the same guys I had had dinner with the night before. There were no real technical questions. They formatted the interview in such a way that went along with my major at school. I am an economics/poli-sci major, so they asked me a lot of questions about what I thought of the Asian market. It was VERY wide-open stuff like, "What do you think of China's political system? How does it affect its economic system?"
All in all, I felt that a lot of the process was more of a fit issue.
In terms of advice: if you are applying to an overseas position, your interest in the job and interest in the region will be far more important than your technical skills. Even if you have a 4.0 from Harvard in finance or whatever, you won't get a position in Tokyo or Hong Kong if you have no real interest in working in that environment.
I speak Japanese and go to an okay school (UCBerkeley), but was not chosen. My assumption is that it simply came down to "fit" as that was the main focus of the process. On the other hand, it could very well have been that they weren't actually hiring interns this year because of the bad economy. Some firms are still interviewing people without any real positions being there.

Interviewed Jan 2010 (took 3 weeks)
I got lucky with this one, as I was fresh out of college, and the economy was pretty rough at the time. I was contacted after applying for the position online. After the initial phone interview and the interview 1:1 with HR, I was interviewed by a panel of 6 managers, all in separate rooms, which was a little bit intimidating (and seemed a bit excessive, seeing that I was only applying for an analyst role). I was asked some questions that I believed were pretty silly, one of which was "How many nickels could you fit into a Boeing 747?" Some interviewers were friendly, but the majority had a holier-than-thou attitude.

Interviewed Oct 2011 in Tampa, FL (took 2 days)
This interview was pretty straight forward. I applied through my school's career website and was selected to for the 1st round interview. The questions were all behavioral with the exception of a few questions that had to do with my knowledge of the company. Most questions were related to leadership and roles in school and internships. Be prepared with examples that you are comfortable discussing.

Interviewed Jun 2011 in Milan (Italy) (took a day)
After a brief bank presentation they asked me the typical motivational questions (why citi, why sales and trading) and then they started asking some technical questions about derivatives (pricing). In particular the interview has benn focused on the hedging strategies. A particular focus has been made also on the options and on the CDS. The interview has been made in one day and I met three members of the team.

Interviewed Jun 2010 in Tokyo (Japan) (took a day)
The interview was for a summer internship position. I had no finance background but they didn't mind that. What they wanted to know was why I was interested in finance, and how I had succeeded so far.

Interviewed Oct 2011 in New York, NY (took 4+ weeks)
The first round was a 30 minute 1:1 interview with a quant director at Citi. Be prepared for about two simple math questions and a bit more behavioral / fit questions. The final round has about 7 interviews in the course of a day, some mathematical, others entirely behavioral. The whole process is about 1 month.
