Works a lot like Don Dodge says it does (search for that).
Can take a very long time, due to scheduling, uncertainty etc.
Slow, with weeks going by without any information.
Interviews are strange - do your preparation.
I had a few phone screens, and over five face to face interviews (and lunch interviews).
People are very smart, and quite friendly, though not everyone looks at your resume before.
Decisions are by committees officially, though a lot depends on the hiring manager and recruiter.
Whilst the 'tests' were not formal they are implicit in the interviews (e.g. skills, intelligence, personality, culture).

I was referred by an employee, which made the process easier, but not necessarily quicker. From the moment the application was accepted to my first telephone interview more than a month passed. The interview was very basic, the HR lady asked some very simple questions regarding my CV and my background, then described the role and their expectations. I was told I would be contacted with further details, but I had to chase them when after two weeks there was no response.
I was told I would be interviewed by a panel, but instead got a single 1-2-1 interview, which in itself wasn't terribly difficult, but slightly uncomfortable as the interviewer was unhelpful and didn't engage at all.
After that I waited a week for feedback which was a mixed bag - some positives, some areas where apparently I had less experience than others. Not surprisingly, no offer.

I applied to Google via a recruiter. Initial impression is good, the recruiter was really helpful and we quickly agreed on the interview date. I failed at the first phone screen, however.
The phone interview consists of forgettable technical questions such as your favourite programming language, what is the difference between a compiled and interpreted languages, etc. It took about 15 minutes before I was given a simple programming exercise. I did it in 10 minutes but spent the rest of the time fixing bugs, it was really quite embarrassing. I was nervous and too was too busy speaking my mind out loud (as was suggested by many for Google interviewing tips).
Another critical mistake (IMO) was when I was aksed what position I'd like to be in, I said the equivalence of "whatever is good for me". I had a few things I really wanted to do at Google but knowing that with the years of experiences I've got, it's unlikely. Sometimes it doesn't pay to be truthful!.

Received a phone call from recruiter and we had a 30-40 minute interview reviewing my CV and work. She stated that based on the interview, she would recommend I go to the next stage which was a telephone interview with someone from the department the position was based in.
I had the interview with the individual. She was 10 minutes late, and apologised saying she got caught talking to someone in the corridor.
Interview were basic questions focused on my experience, and I dont think she had even prepared for the interview.
She ended the interview saying that she would share her feedback and someone will get back.
No one got back to me with any feedback, despite my e-mails.
All in all totally dissapointed with GOOGLE!

First a discussion with the interviewer about my phD research, 35mins, he asked a lot of questions about the research top and the methodology; next, some questions related to basic econometrics, but requires deriving formula (e.g. to derive the variance of an OLS estimator from the OLS estimate itself); the next question is "how you evaluate the effectiveness of google mail with respect to persuading people using google more frequently than our competitors, say, yahoo, you can imagine you can get what ever data you could, - tell me what data you would like to collect and how you want to use them, and what potential insights would you expect to get out of them?"

The question was to create a graph class and some traversal algorithms (bfs for example and bfs with a depth limit l). The main idea was to create a list of seen vertices and use a hash function in the graph traversal algorithms to avoid loops (asked by the interviewer) .

After 2 weeks was invidet for on site interview. Very technical questions.

The interviews were by engineers on technical knowledge and basic programming skills (e.g. understanding recursion and iteration), as well as product managers who covered business models, strategy, approach to designing products, and a lot of mental modelling and calculation exercises, to see how a candidate breaks down a problem and figures out a rough answer - in one or two cases a precise numeric value was required, not just a description of the variables that would be used to calculate it.
