Interviewed Jan 2012 (took 3 days)
Applied then had a short interview. Called back a few days later and met with a manager and was asked about former experience (had plenty). Then met with the general manager who asked questions on the theory of hospitality that didn't seem necessary for this type of work. Was offered the job on the spot.

I walked in after a golf outing because I noticed they were hiring, and they had a trailer parked outside. It was not open yet. I was asked who my favorite golfer was and what I shot and I was hired on the spot.

Basic interview, it was a 1:1 on one of the empty tables sometime before lunch hour. Basic restaurant job, didn't ask many questions, had me talk for most of the time. Liked good high school record, offered me the job on the spot.

Interviewed Nov 2009 in Waldorf, MD (took 2 weeks)
The hiring process is much more extensive than any other restaurants. They have an initial interview and if they hire you there are several classrooms and training sessions. You are tested on just about everything, even things you don't need to know for your position. They time you on serving tables on the regular.

You fill out an application submit it with a resume and BUG the hell out of them until you can speak with a manager. You interview, be sure to smile and be upbeat. They determine whether or not you are good at conversation and multi tasking and give you an offer on the spot.
