Former Employee - Sous Chef in Skillman, NJ

I worked at ClubCorp full-time (less than a year)

A great opportunity to learn how to overcome challenges and grow as an individual and professional; however the lack of corporate support, procedures, and training, will lead one quickly to move on.

The biggest con I have found is the cookie cutter approach to their take over of newly bought clubs. They should really take into consideration that each market or territory is going to be different. What might sell well in Ohio might not sell as well in Miami. They handcuff the creativity of their chefs forcing them to write menus out of a database that is archaic. Finally, the upper management is so detached from the front lines. They install certain protocols, with good intentions, but ultimately fail to due the lack of communication with the people on the ground.

    Advice to ManagementAdvice

I don't encourage micro management, but do encourage that they initiate training programs and seminars where they will have the opportunity to talk with their employee partners and address issues that might not be apparent to them.
