I worked at P.F. Chang's full-time (More than 8 years)
Culinary operations were always to spec; cleanliness was key, portion size, cook temps, and food handling. Training for new FOH employees was in depth and executed well. Paid vacation for management is nice. AOR's are clearly defined, expectation are clear.
If you are in management, expect very long days and long hours. You will work every holiday. Expect to work hourly jobs, bussing tables, working as the expo, answering phones at the host stand. Since PFCB will not allow for any extra FOH or BOH labor, those roles are filled by managers. After the buy out from Centre Bridge, PFCB modified their bonus structure, impacting every manager. Salaries are laughable compared to competitors.
Advice to Management
Share works of encouragement with management. Do annual reviews to let them know where they stand and can improve.
