Pros

Recognized Chef, industry name, good presence in the Los Angeles and New York City Markets. Some talented people at the helm.

Cons

Downturn in industry has created a somewhat necessary penny wise, dollar foolish mindset at the company. This will hurt them compared to others when things finally turn upward. They have a lot of unprofitable locations bringing the rest of the company down.

Advice to ManagementAdvice

Remember what made you successful in the past. In this economy "luck" will be exposed for what it is. The only differentiation companies have now are their "people".

    working with some of the top chefs in the city...also learning new trends and tech of gastronamy.

    the amount of money you get vs. the amount of hours you are expected to work.

    customers are challenged, tips are crap a lot
