I worked at University of Connecticut full-time (more than 3 years)

Pros

Great union, great benefits, low-stress working environment, 35-hour work week, flexible work hours. Very easy to stay employed once you've been hired.

Cons

Not generally a very creatively stimulating, easy to get bored. BIG bureaucracy, lots of red tape involved with raises, merit, etc. Pay is lower than the industry standard, but could be due to the great benefits and low stress.
