Pros – Working for one of the worlds most talented and respected Chefs, can be rewarding in its own right. Great product and quality message.
Cons – Long hours that can sometimes be waring. Communication problems if not a natural French speaker. Occasional rude guest.
Advice to Senior Management – Ensure that all promises to staff are followed up and followed through.
A systemised approach to training and developing all staff.

Pros – Opportunity to work with some nice products, Creative freedom, Decent hourly pay, Access to lots of cool equipment (Paco Jet, thermal circulator)
Cons – Absolutely no communication of expectations, Very little job performance reporting, sketchy business practices, no benefits( overtime, medical, paid time off)
Advice to Senior Management – There is nothing I could say or do that would help L'atelier become a better place to work. It's an HR persons nightmare.
