Former Employee - Server in New York, NY

I worked at Patina Restaurant Group full-time for more than 5 years

    Pros

Non-seasonal employees receive full health care for nominal charge through the union. Holiday season provides many opportunities to work and make great money. Regular customers (from NBC and other corporate/businesses in building and nearby) comprise a good deal of breakfast and lunch business.

    Cons

Frustrating conditions: Want servers to perform at fine dining level but don't provide support staff to do so. Attracts many tourists who think it is a cafe or diner and are shocked by prices (and therefore do not order much). Junior management is routinely stressed and either take it out on staff or have difficulty handling issues.

    Advice to ManagementAdvice

Become clear about direction taking restaurant and follow that direction through so it's consistent.

I have been working at Patina Restaurant Group

    Pros

The money is decent, there are several managers who are extremely supportive and kind, schedules are generally respected and flexible, no one ever gets fired

    Cons

Extreme overstaffing, brutish managers, no help in cases of repeat customers who do not tip at all, impossible to get benefits, no communication between managers and staff

    Advice to ManagementAdvice

the goal of the staff and management is the same: maximize sales and customer satisfaction to maximize profits/tips. increased communication would do a world of difference and a happy server is more likely to lead to a happy customer and ultimately a happy bottom line for Patina. staff suggestions should not be treated as subversiveness.

I have been working at Patina Restaurant Group

    Pros

The collegiality amongst the staff, and the money, although inconsistent, can be very good.

    Cons

Management is overworked and underpaid and MISERABLE. Service should be included in these tourist locations, otherwise your staff works hard for little reward. Where is the motivation in that? See below for more cons.

    Advice to ManagementAdvice

Your servers need protection from the guests not leaving tips. Hospitality is never authentic unless you are paid to do your job. It would do you well to include the service on all checks, thus guaranteeing authentic hospitality for all of your guests. Your junior managers are in over their heads, and there are far too few of them available for points of service. Your senior management are not real leaders, as no one subordinate wishes to follow. There are no growth opportunities for servers, and very little for support staff. You have spectacular talent on your floor and they receive no acknowledgement for their great jobs, for which they get paid very little. The servers seem to receive blame for much of the failings of the restaurant which has killed morale. The Company has serious problems in some of their NYC restaurants. Some of them are going to become legal issues very soon. They deserve everything that is coming, however, it all could have been avoided with proper leadership.
