They allow employees a lot of time off as long as it is requested in advance so that they have some notice to compensate their scheduling.

Different vacation amounts depending on job band. I've never heard of anyone who's full-time having less than 2 weeks paid vacation per year. Also, all federal reserve holidays are paid holidays.
Depends on the position you're in
Generous but how used can vary by state. Some allow for sick and vacation time to be rolled over, some allow for sick days to be used as personal days, and other states (and managers) in those states are more rigid in letting you use all time provided.
