NRDC has a great 401k plan and probably one of the best benefits packages I've seen offered in the non-profit sector. In addition, they offer great vacation packages at the start.

NRDC has really nice benefits - good health plan (and contributions are pegged to salary - so the lower your salary band the lower your contribution), gym membership funding, commute benefits, high 403b contributions (NRDC contributes 8% of salary for employees <4 years and 12% for employees 4+ years), and great maternity/paternity leave. Allow for a lot of flexible scheduling and off-site working. And a ton of sick leave and vacation accrual - with all federal holidays off and paid for.
