, told it produces some product and all the documentation has been lost for how the machine works and it is up to you to figure out how it works. The exact question, which in my opinion was worded oddly, was "What do the knobs do?"

I realized after the fact what they really were asking was "How would you go about determining what the knobs do?" What they are looking for is a process of trial and error and being able to correlate a knob position with a result of the final product, kind of like a design of experiments. At the time, I was very confused and I am sure that effected my hiring outcome.
