ACT on it, Apologize, Correct, and Thank them.
Alway listen to the guest, even if the situation can be outlandish. Apologize for the situation and if it's something that can be corrected. Do what you can to make the guest leave restaurant happy, whether giving a comped meal, discount, free dessert, gift card, etc. thank them at the end for bringing issue to your attention.
