Obviously, any candidate who hears this question is going to think they are SUPPOSED to answer with "the environment", because this is an organization of environmentalists. I knew I was going to be asked this question, and frankly, there are a lot of issues that would have come before the environment in my mind. I debated how I should answer, and ultimately elected to be honest, if only because my interviewer specifically said it doesn't have to be environment-elected. My answer was animal rights, and I was careful to mention that there's a lot of overlap between animal rights issues and environmental issues in the farm industry. I wish I had some sense of how big a difference it made that I didn't answer with global warming or something of the sort, but I honestly have no idea.
