I worked at Halekulani full-time (More than 3 years)
Great hourly pay, comparable to unions scale or better.
AAA Four Diamond hotel, so F&B is upscale in terms of product and service.
Uniforms and one meal provided.
Parking is cheap for Waikiki area.
Most co-workers are culinary graduates or have good knowledge of techniques.
Non-union, so working hours can vary greatly and there is no restrictions on "time between shifts".
4 Diamond, but food could be more upscale.
Uniforms are not very nice considering rating of hotel.
Lots of workers have bad work ethic, but seems typical for Hawaii.
At the time of my employment, management (chefs) didn't seem to care about organization, efficiency, cleanliness, and product integrity.
Advice to Management
Treat your employees as you do your guests...
Take more time to audit your departments to discuss possible inefficiencies and problems that may not be brought to your attention by non-management workers.
