Restaurant managers are constantly changing, which is very disruptive to the store. Pay managers a little bit more so you attract better managers that will stay longer and give consistency to the restaurant.

    I worked at BUCA full-time

    Pros

The ability to care for the guest is paramount. The systems to ensure proper hires with background checks for all employees keeps everyone safe. The innovative dishes that come out have positive guest feedback. The pay is reasonable

    Cons

The actual owner is This is a privately owned cash business. This means your R&M is done only if safety is compromised. The brand quietly shuttered 10 locations in the past few months and many of those should have never been opened. Senior Mgmt keeps turning over as it is a numbers game. The quality of some management teams are questionable. This brand is great for single people.

    Advice to Management

Robert Earl may have plaques on his wall, know celebrities, have a yacht, and be worth one half-billion dollars from his investments, yet he is not invested in his people. His "people" work 6 days per week, 80+ hours per week, open-to-close with no quality of life, even on vacation when called by rotating Senior management. When management teams leave because they are burnt out or have health issues should be a red flag. Invest in an consultant to survey the "family". The employees and yelpers are extremely dissatisfied. I see bankruptcy on the horizon.

    I worked at BUCA full-time

    Pros

Not much to share as far as positives go.

    Cons

Others may have had better experiences as a Paisano, but mine was overly challenging. I went and entire year without a chef or staff manager, this led to very long hours and an unbearable work load. The issue I had was that my superiors' workload was incredible as well and no real focus or effort was adequate to lighten my burden. Eventually I became burned out and sought employment elsewhere. A positive note is that since my departure they have restructured their upper management allowing for more attention to stores. Also open 365 a year, very difficult around the holidays, if you have children.
