    Pros

    Full time with benefits, most holidays off, and there are many options of tasks to be performed so if you do not like what you are doing you can be easily moved within the same site.

    Cons

    Stressful during large events, ALWAYS short on staff, and only work approximately 42 weeks a year.

    Communicate better with employees as well as other members of management.

    I have been working at Bon Appétit Management full-time (More than 5 years)

    Pros

    Great lunch and generous meal policy. They do put a lot of focus on the recipes and using local seasonal ingredients.

    Cons

    Upper management is grandfathered in with very high salaries and job security- they often aren't in tune with current trends or industry standards so a lot of the work falls on a severely underpaid and skilled middle management. Supervisors and operations teams lead the floor and also have to put up with unwarranted criticism from lazy general managers who are quick to scold, since they seem frustrated with the technologies they now have to use daily but still don't fully understand.

    It's a harsh culture of accusations and bosses who constantly think you're not working hard enough when you don't sacrifice your free time to do more work through the evenings and weekends. Meanwhile they spend most of their time on vacations and golfing.

    Advice to Management

    Cycle through the old school executives and you'll free up some top heavy dollars to compensate up and coming managers who deserve an opportunity to lead. Decide if you're still ultimately a good company that values food practices and employee livelihood- or just headed towards the full bureaucracy of a stale, bland corporate takeover.

    Pros

    Exposure to great food, people and events. Able to network with other chefs in the company across many regions. Freedom to create and farm to fork mantra

    Cons

    Not enough time in the day. Sometimes understaffed which means longer hours than typical sous chef. Lots of turnover at our account

    Pros

    This is a large food service management company that tries harder than most to be a sustainable , environmentally minded corporate citizen. They feed you well and treat employees respectfully.

    Cons

    They may mislead new hires about how many weeks and even months that there is absolutely no work, due to following the undergraduate class schedule. Job duties are ill defined and are only transmitted by word of mouth, no hand book, so be prepared for a whole lot of conflicting unsolicited instructions from ...basically everybody .

    Pros

    Monday thru Friday weekends off. 40 hour work weeks. If you are a competent chef, the chef will leave you alone to do your thing

    Cons

    No advancement, only when someone gets fired and they can't find someone to replace them. No overtime anymore. Management's a joke.

    Joke, always beating around the bush.
