I worked at Dickie Brennan's Steakhouse (Less than a year)

    Pros

Learned from going to classes they offered.

    Cons

It is very hard to advance. If you want to advance it is best to learn all wines and ingredients of dishes served. Make sure you are put with a good captain otherwise you will not learn anything.

    Advice to Management

    None

I worked at Dickie Brennan's Steakhouse full-time (Less than a year)

    Pros

I've been looking at my screen for three whole minutes attempting to find a positive thing to write about and it's almost excruciatingly hard to do so.

    Cons

Downtown is ripped up and under construction so good luck with your commute.

Enjoy finding parking for under $10 a day to even get to work.

Extreme favoritism. I literally would see some employees curse out upper management and receive no flack whatsoever.

That whole front and back waiting thing is a joke. Sometimes A waiters don't even give their B waiters all of their money they're owed.

They have a "shift meal" before each shift which can either be great or downright pig slop. Way to show your employees how much you care.

Long hours. In order to even love semi decently you literally have to sleep there.

    Did I say favoritism?

If you follow the rules and actually try to take time off by requesting two weeks in advance it probably won't be granted. You'd do better just becoming irresponsible like most that work there and "call in".

If you don't brown nose, you'll be looked at as a "problem employee". Your work ethic and how many sales you make mean ZERO to this company. It's all about the cliques here.

    Advice to Management

Grow up. Hire more competent individuals who aren't constantly making disgusting inappropriate jokes and who aren't even qualified to manage an ant hill let alone employees. Act like your employees aren't livestock that need to be herded.

I worked at Dickie Brennan's Steakhouse part-time (Less than a year)

    Pros

Working at the Steakhouse was overall a really fun and rewarding experience. Working restaurant jobs is by nature stressful, but considering this place only does lunch once a week and for special events, things like double shifts are kept to an overall minimum, which is kind of a rarity in the French Quarter. The compensation is above average for serving, and the clientele is overall pretty good, although we did get some of the drunken rifraff from the French Quarter.

Managers were overall responsive to needs and concerns and fostered a good working environment among the FOH staff, while at the same time keeping things running smoothly most of the time. They were fairly good at working with your schedule. The Chef and Sous Chef's ran a tight ship in the kitchen. Oh yeah, shift meals for less than $1 each were a pretty sweet perk, too.

    Cons

Because it's team service, if you get stuck with a crappy team, that can easily ruin your night. Also, because the serving staff is so large, miscommunications regarding scheduling occasionally happened. Biggest con is that there was no set closing time. On slow nights, this could be a good thing, as it could mean closing before 10. On nights with late arriving crowds, though (ie Jazzfest), it meant staying open until 11:45 catering to all the drunk people wandering in. Ugh.

    Advice to Management

Consider your employees when making decisions like scheduling and closing times. Working back to back doubles isn't easy!

    Pros

If you are looking for quick money as a waiter this is a decent job.

    Cons

Management was terrible and incompetent. Kitchen staff were on the edge of mentally retarded, I doubt many were literate.

    Advice to Management

Learn how to respect employees, help them become better, and promote based on performance.

I have been working at Dickie Brennan's Steakhouse full-time (More than a year)

    Pros

Awesome staff members, well-executed management, guaranteed business, family meals offered, excellent benefits, professionalism in service and menu offerings, wonderful ownership of company, management openly accepts concerns and suggestions from lower staff members.

    Cons

Hours can be a bit ruthless. On busy weekends, don't expect to get home before 2 AM or you'll be very antsy for the whole shift. Overall, if the employee has a positive attitude, the long hours aren't bad. Some long shifts can be an awesome money-maker or a total flop. I've definitely worked a 17 hour day and only made $100, however, the opposite scenario is also true. Many employees have young children and often do not get home before midnight.

    Advice to Management

Perhaps to make more effective ways in relieving the stress of long weekends - employees taking breaks in shifts, etc.
