I have been working at Air Culinaire full-time (More than a year)

Pros

Lots of travel involved, quite a good base salary. Varied workload giving a very strong grounding to build on. Lots of exposure to upper management

Cons

Potentially too much travel. Poor benefits and commission. Crossover between sales and operations is too close. Very focused in USA where company is based.

Advice to Management

Expand management outside the USA, reward employees with a more generous commission structure.

I worked at Air Culinaire full-time (Less than a year)

    Pros

You learn quite a lot here. It's not your normal catering gig. Some employees which you consider your family make work tolerable. They offer full benefits, 401 k, paid vacation.

    Cons

This company can be extremely greedy. Too high volume and always trying to cut back on employees leaves so much room for disaster. Too little employees work per shift, with the expectations to get the job done (on time) with close to no overtime for those that are hourly employees. Which leaves the day shift in a panic to catch up, which in turn leaves the night shift scrambling, which in turn leaves more room for error for both shifts because absolutely no prep was made, and it's all just one huge snowball just waiting to crash and burn. Can't spend all day prepping without producing orders (and vice versa). When it's beyond busy, they expect you to stay and finish, but at that point everyone is so used to leaving on time no one wants to stay late. Many employees stopped caring, and others do whatever they want (and that's including doing drugs on the job, drinking, stealing, etc.) and come and go as they please. Even when management are made aware, there are no serious actions towards fixing any issues but instead cause issues in between other employees. The senior vp has no idea what's happening in any of the kitchens. Just wants to cut back on everything. Lord forbid a kitchen gets something wrong on an order. It's immediately, "have to change" or "get rid of" or "no more excuses" of employees even before finding out what exactly happened. Never sides with the kitchen or finds out what happened first. Company might make you to believe there's room for growth and opportunity, but the turnover rate is so ridiculous, no one is around that long to even get that chance or even consider wanting to. Senior vp does not prefer or like to promote from within so good luck trying to get your dream job. Good luck if you ever receive a "bonus." I've only received one my entirety of me being there, and it wasn't all that exciting either. The raises are a joke. The most or highest amount you can get is .10-.25..... Cents... That's right. And that is if you're lucky enough to even get a raise.
