Pros

You make cash daily as a server.

Cons

Management keeps your charge tips for two weeks - they come in your check, not by cashing out. You, the employee, have to find your replacement if you want to take your vacation or a day off, even months in advance. If you earn vacation time, you lose it if you quit or are fired - for example, you take your vacation in December and the company pays ALL vacations out in the spring. Quit or get fired between your vacation and the spring, you lose that pay. I felt like the staff are just bodies doing a job.

Advice to Management

Stop keeping your servers' pay for two weeks so you can make interest off it. That's a serious a*hole move.

    Doesn't Recommend
    No opinion of CEO

    Pros

Good benefits (if you can get them, good luck employees)
    Good training program
Most employees and managers are great people

    Cons

-You have to discipline servers if they can't sell extras in a poor economy
-Lots of pressure on GM's to be perfect, as in " Yeah you have the highest profit percentage and lowest costs percentages in the area, but you suck because you can't sell lots of desserts or small OJ's" or "Bob can get a 22.5% BAD percentage, why' can't you?" BAD=Beverages, Appetizers, Desserts.
-GM's make decent money but are usually miserable because they always feel like they are on the verge of being fired.
-Upper management generally old-school, whereas they think their employees are lazy idiots when they are not.
-Your manager wants you to micromanage and delegate at the same time.
-Corporate constantly trying to get rid of employees with full benefits to reduce costs.
    -Generally stressful and threatening environment
-It's hard to find high quality employees when the company only wants to pay minimum wage.

    Advice to Management

-Understand that minimum wage makes people very clear about the fact that you don't care about them, and they will continue to look for better work.
-Stop looking at full-time benefits as a cost, and instead as an investment.
-Stop trying to take away benefits if you don't want to give them out.
-Stop expecting your people to be perfect if you don't want to give them the tools to do that.
-Realize that this bad economy will soon get better, and your best people will leave as soon as they can if you can't give them genuine respect.
-You need to respect everyone that you see fit to hire, not just the ones that can be absolutly perfect.
-Assess General Managers by multiple metrics...look at the whole picture, not just how many OJs are sold or only Food Cost or only how high/low sales are versus last year.
