Pros
Darden(Longhorn parent company) for the most part runs the best restaurants in the industry. They know the market, customers, etc much better than other groups. You feel like you are working for a well oiled machine. Benefits and pay are good, not excellent but you trade this off for working for a more solid foundation. Long termers reap some nice vacation times and for the most part they do their best to make sure you get that time. If you're looking for solid and dependable this could be a restaurant group that fits one's needs. A big plus is the 9 brands Darden owns and you get discounts at those other brands when you dine.
Cons
This is a very high stress job(Top 10%). Labor situations are often very tenuous and Labor is run very tight here, so a callout or lack of an employee means you'll be working their position and managing the responsibilities of running the restaurant at the same time. Constantly dealing with broken equipment, AC, etc just gets tedious and adds to stress when having to listen to staff complaints all day. IT here is generally horrible, other restaurant groups are way ahead here. Lastly, guests here can be very problematic, they know this is the restaurant they can get freebies at ease and they play that tune well. Corporate will always believe guest over managers, so one has to be extremely careful dealing with them. Favoritism can also be rampant here.
