I worked at The Capital Grille full-time (Less than a year)

Pros

Decent food. Access to cheap ingredients. Good dry aging program

Cons

Chefs are overworked. There is only 1 exec and 1 sous per kitchen. ABSOLUTELY do NOT believe them when they tell you it is a 55 hour work week!!! It is 65-75 on average with no consistency in your schedule. if you want any sort of work/life balance this is not the place for you

Advice to Management

Stop treating your chefs like slave labor. Invest in more kitchen management so your chefs can have the quality of life you preach about at Darden U.

    Pay, serves great food, legacy, networking, recognition of EDGE

    Cons

    Too many rules, miscommunication, managers having different ways of doing things

    Advice to Management

    Communicate on the small little details and every rule, be on the same page.
