    Pros

    Sauce was a great environment, and helps move all employees at a faster pace when things tended to get busy, plus there was always something to do even when hours slowed down.

    Cons

    Sometimes the food wasn’t cooked properly which led to problems with customers.

    Advice to Management

    Management was doing an amazing job with how busy it could get.

    I worked at Firebirds Wood Fired Grill full-time (More than a year)

    Pros

    The only positive outcome from my year employment was some of the friendships made. As crazy and unorganized as it was, the people there made it more bareable.

    Cons

    -inconsistent kitchen leaving servers left to deal with angry customers.
    -overschedule servers which would dramatically effect how many tables/tips you would get per shift
    - Nit-picky rules from corporate (unlike the generally reasonable rules I've experienced working at other corporate restaurants)
    -Frequently changed entire management staff every 6-12 months
    -Did not give hourly wage when working overtime or when tips were less than the hourly minimum wage required to be paid. (everything made sense when a few weeks ago I received a class action, court ordered lawsuit against them for $1.3 Million, which explains their crime in detail.

    Pros

    I loved working with my coworkers (most of the time, that is). Firebirds has a very friendly atmosphere, and I especially enjoyed the emphasis management put on keeping the guests happy.

    Pros

    They are extremely professional and knowledgeable in all areas of a kitchen. I feel that the manager staff, the sous chefs and many more were very hard working. I felt engaged with other co-workers and enjoyed many more relaxed aspects of work.

    Cons

    More than likely because of it's busy location... I felt as a single prep cook, that work was often too difficult to finish. A lot of care and precision is meant for many recipes, to ensure an exact product every time. The pressure of not completing those assignments, though working very hard for sometimes extended shifts was extremely difficult.

    If this type of work is new to you... it will be difficult to adjust. I failed in that regard, where others may succeed. Despite this, the average 12 dollars pay... isn't worth the stresses, when many other jobs paying the same rate, will not follow with the exhaustion and pressures of under performing. I myself, witnessed many new cooks constantly with a difficulty to adjust. And then the pressure would be back on 1 or 2. It seemed like a difficult position to keep filled.

    I feel 15 an hour, would equate to the pressures expected in this position. 14 would be lowballing it.

    Advice to Management

    Recognize the difficulties of the position. Perhaps find new teaching methods.

    Working nights and weekends is the only way to make money there, but that's typical for any serving job.

    Treat your employees equally and with respect. Consider spreading the side work to all employees instead of having one employee do multiple tasks.
