    I worked at Fogo de Chão Churrascaria full-time (More than a year)

    Pros

    I basically learned how to work like a Brazilian work horse. The hours weren't cumbersome, just fatiguing due to work load and ethic withheld.
    Hard work pays off if you have no plan but to make money in one spot for years.
    You will learn a lot both front and back of house, management loves helping and explaining when they have the time.
    Learned a decent amount about South American wines and Brazilian culture
    Free & fresh food/steak/protein every night after shift
    Staff has no choice but to get along since tips are shared. So extra activities normally happen with the gang after work with no strings attached.
    Cash tipped nightly, credit card tips towards check.
    **YOU WILL BE ABLE TO WORK AN ANY OTHER RESTAURANT WITH EASE IF YOU SURVIVE HOLIDAY SEASONS.**

    Cons

    -You will not see your family if you still live with them, all your weekends belong to them, especially your holidays.
    -Too many cheesy promos to try to lure customers back in, somewhat diluting the clientele
    -If not Brazilian you will have a hard time winning them over regardless of your -work experience. Even more so if you dont speak any Portuguese or even Spanish.
    -You better hope you knew some things about food service before they scold/point it out to you.
    -Small mistakes are not overlooked.
    -They have cameras everywhere literally in almost every back of house area and some on dining room floor. It causes paranoia since management really wants to be intimidating and decisive about promoting.
    - Pensive behavior from management when overwhelmed

    Advice to Management

    Try to be slightly less bias to those of your native background, be more willing to work with those who NEED to take time off, you do not own them they work for you to support their own lives.

    High paying for the industry

    Event flexibility/pricing
    Great customer retention, fluidity of gift certs to solve issues

    Cons

    - Lack of communication from in-house management, and especially from Corporate management.
    - Training is lacking operationally and for management
    - Management is closed off from receiving any feedback, especially necessary feedback. Close minded.

    Advice to Management

    Be more open minded and friendly to staff. Employee morale is one of the worst I have ever seen and management does nothing to help that. No accountability.

    Very poor work/life balance. Fogo is expected to come before everything else, including family.
