High Expectations, Low Compensation

I was hired as a food service rep, but I opened the store daily by myself and was responsible for getting everything ready for the doors to open without any help. When the manager came in 3-4hrs later, she went straight to the office and sat down. I made all the food and replenished coffee hourly, ran the cash register, checked in vendor orders, stocked shelves and the cooler, and cleaned every surface in the store without help. I never took a lunch break the entire time I worked there and when I was able to get a smoke break, I was scolded by the manager because she had to run the register by herself while I was gone for 7mins. She would then leave the store half an hour before the end of my shift to buy lunch at another convenience store and then returned to our store and took an hour lunch. I went home in tears at least once a week because I was so stressed out trying to perform 2 people's jobs by myself. When COVID-19 caused the company to put new sanitation measures in place, the manager wouldn't ensure shift coverage to allow for the added work and instead encouraged us to just initial the checklist of duties to make it appear that they'd been done, which made it look like she was actually managing the store when the district manager would check in. I actually did a 11hr deep cleaning in the store before a corporate visit and then watched as my manager showed off my work and took credit for it. She also got caught telling customers and other employees about a new transgender employee, making it uncomfortable for her to work there, so she quit.

Pros
For the most part, everyone I've worked with has been a nice person. They seem to try to care about their employees. Good opportunity for upward movement.
Cons
High's has a lot of issues that are common in small business, but a lot more issues that are incredibly unique. They expect way more from employees at all levels under upper management than they're willing to compensate for. They take on projects like it's a high school group assignment, not like a business. No one takes responsibility for their mistakes, no one lays out project plans, no one tests anything that gets implemented, and while small projects may have a year's notice, large projects may only have a few weeks' notice. The office level is beyond understaffed. Most positions do not have any form of backup, and it is common and frequently expected for you to work during your vacation time. As employees leave, their job duties are broken up and redistributed amongst remaining employees "temporarily", only for them to decide that the new layout works for them. This is in spite of how quickly they are expanding (7 new sites in about 2 years). Raises and PTO increases are mediocre at best.

Pros
Fast operation where can be improved the food operation skills. Improve the team work, allow to work with diverse people. Encourage the trainig and learn doing.

Some times is disorganized. Not fluid communications channels. Trying to establish controls on key performance indicators but minimizing labor cost at the same time frequently cause not to get the goals.
