    Pros

    Great chef(s) fun to work with and learn from. Brigade is solid and dependable. Chef fosters a team environment. Classic work hard play hard attitude.

    Cons

    Long hours during season. Wages lower than ideal. Service staff entrenched and spoiled a bit.

    Members are often difficult to deal with, low pay, no bonuses or incentives to work harder.

    Create an in-house rewards system in which employees and managers can anonymously applaud or critique workers to increase accountability.
