    Pros

    I likked working for Daniel Boulud - he is totally crazy but he cares about everything!! They promote from within, lots of managers move to differnt properties. Decent people

    Cons

    Long hours, a lot of picky customers, working Sunday brunch. So expensive to live and work in NYC

    resume builder-thats is all

    Cons

    no pay
    high turnover
    bad, ill-informed boss
    horrible work life balance
    not knowing schedule until a few days before
    advance is bias and slow
    sexist- worse than other kitchens
    not paid for overtime
    boss changed times to pay me less
    forced to come in 90 mins early with no pay
    food not up to haacp standards
    young staff with little management experience

    Advice to Management

    hire better well informed bosses

    Pros

    If you work hard, you can succeed at one of the most highly regarded restaurant groups in the world. Your resume will always look better after working there for 2+ years, if you can last that long.

    Cons

    Company treats its employees as expendables, out for their own gain above all else. Do not expect to find a family there.

    Advice to Management

    Actually set an example, do not take shortcuts, listen more than you speak and make other people want to be there.

    Pros

    I served tremendous wines. I was able to really refine my skills as a Sommelier. I experienced advancement within the company.

    Cons

    A negative is that the way the restaurant was set up required the sommeliers to walk through the kitchen, a hallway and down a flight of stairs to get wine. It took us off the floor for too long.

    Advice to Management

    Maybe try to not give too much attention to the VIP's because it is distracting to other diners and makes them feel less important.

    Pros

    The people that work at Café Boulud are one of a kind. Everyone is supportive of expanding your knowledge and skills in all aspects food and bev. As a generalization, the managers are amazing. Benefits are unbeatable: free health insurance after 3 years with the company, 401k, and paid time off.

    Cons

    Clientele can be demanding and particular. Scheduling isn't always seamless, but that's part of the industry. Family meal leaves a lot to be desired.

    Hold staff members more responsible.

    Pros

    Great training, decent hours for bread baking, lots of different breads, fast paced. Resume and skill builder. Benefits are decent.

    Cons

    Culture of a French kitchen can be a little rough and impatient. Training is not necessarily in English: learn by watching but pressure is on to be very fast.

    Advice to Management

    Only one week of vacation time after a year of service is very low for a fast-paced, very physical job.

    Beautiful food concepts, but a menu undeserving of the boloud name

    Pros

    Working with amazing chefs, and a team of fun but serious workers who all have very positive attitudes. Had the opportunity to attend NYC F&B event while assisting the pastry chef (I was in Pastry). Really good experience. I was an intern back then.

    Cons

    There really isn't any I can think of. The restaurant is really busy so prepare to work a lot (with lots of passion too ;)).

    Pros

    I cant speak for the other restaurants, but the one I work at has an amazing boss. Smart and outstanding at his job, but also very cool on a personal level. Insurance is a rarity in serving jobs so that is a big plus. The people and the insurance are the reason I've stayed as long as I have.

    Cons

    The money is below what you would expect. Too many hands in the cookie jar. My experience in NYC is the typical tipout (to bussers/runners/bar) is 40-45%. Here with "managers" (sommeliers, matire d, etc), we tip out around 65%. Making $500 in tips a night but only actually getting to keep $150 is very frustrating.

    Advice to Management

    Give "managers" a salary so servers don't have to share their money. Other than that, no complaints!
