Dress nicely, have references ready. Long term references (2yrs. plus) is more important to the owner than many references. Your personality and chemistry with staff and guests is closely observed. The amount of training is commensurate with your experience unless they are short staffed, in which it is an opportunity to show what your made of. Make yourself flexibly available and you'll start out making as much as any senior wait staff, provided you're experienced. This restaurant relies heavily on the strong, experience of workers who can perform better than most in their field. Excellent communication skills and the ability to improvise and remedy are crucial.

You may be asked how things could be improved, and despite having creative and clever suggestions, your answers may be overlooked or ignored. Computer and clerical menu problems, along with the chef's unpredictable moods can require your ability to charm, appease, and placate situations, despite your innocence in creating the problem.
