Pros
Highly dependent on the lab you apply to. Good to cold-call and email beforehand and meet up in-person if possible. Ideally, try to find out the people who you will be working under and show interest in the topic.
Cons
Workload is dependent on your supervisor which can be light or heavy. Alternatively, your supervisor may not regularly check up on your progress if you are doing a school project. However, being able to work on your project independently (or at least unsupervised for weeks between meetings with your supervisor) is a very good skill to learn. Understandably, it helps if your mentor is also very good in guidance.
