Pros
Free & unlimited food every shift until 8pm. Relatively low pressure if you work the night shift (no managers to micromanage you). Autonomy from the hotel you work at, meaning you are a completely separate company from the hotel, so you only have to worry about the AV stuff. Every now and then you'll work a fun shift. Generally, coworkers are chill and laid back. Decent pay for the amount of skill/prowess this job requires. Unprompted pay raises every few years.
Cons
Repetitive duties. Setting up equipment, tearing it down, rinse and repeat. Most shifts are boring. You will have to work 2pm-10pm on standby just in case somebody at the hotel needs an extension cord. 90% of your time will be spent handling equipment that is not exciting or fun at all, i.e. tape, power strips, and flipcharts.
