The quick-service restaurants offer a variety of submarine-style sandwiches, served both hot and cold, as well as gourmet sandwiches, salads, and sides. Company president William Specht opened the first Cousins Subs in Milwaukee with -- you guessed it -- his cousin, James Sheppard, in 1972.
