Pros
Super fine dining experience. Working with the best Chef's and cooks in the city. Quality ingredients matched with excellent skills provides a great learning environment for eager hard working cooks. Hotel pay is higher than other restaurants and there is lots of approved overtime.
Cons
Working environment can be cutthroat and uncomfortable. When I was there it was hard to find much of a team atmosphere. Cooks were working as individuals and working against one another. That doesn't not promote a healthy environment and I believe it effects the quality of the product.
