I was living out of state so I skipped the interview and went directly into the 2 day tasting. You arrive day 1 around 8am, I did not go to lunch with the dept. Chefs (I suggest you don't either, although they'll ask you to go) and I left for the night around 6pm. You return the next morning at 8am and you present: 3 plated desserts, 3 banquet desserts and 3 petit fours, at around 4pm for the Executive Chefs of the property and I had the Exec. of MGM Las Vegas at mine as well. They chit chat for a bit and then the department chefs will deliberate. After about 20 minutes they gave me a critique of my tasting and then offered me the position. It takes forever to start bc it's MGM, so cushion a 30 day wait time into your budget.
