I applied through an employee referral. The process took 2 weeks. I interviewed at Target (Dallas, TX) in Jun 2012
Interview
Very long and complicated process, but that is to be expected when a company is going to give you handcuffs and authorize you to detain people. I think the one on one interviews are fair and make it easy for them to weed out bad candidates.
I applied online. The process took 6 weeks. I interviewed at Target (Columbus, OH) in Dec 2018
Interview
Multiple interviews, mine were almost all over the phone due to circumstances. Interviewers will ask you to tell them about a time you were in X scenario and how you handled it. Prepare to tell "power stories" that showcase your versatility, adaptability, resilience, customer focus, etc. You must have a specific instance to talk about. Too many people talk about what they would do. Big mistake.

Interview
The process started with a phone screen, then because I was applying to a position in a different state, all other interviews were by phone or facetime. The first screen was with Talent Acquisition, the next was with a store director, and the final interview was with a district director.
