They ask common sense questions but you do have to be knowledgeable in fine dining service as the place requires you to be on top of very high demanding guests
Very busy environment, some interviewers were friendly and others weren't. Asked me to demonstrate setting an elaborate table. Asked servers to describe their favorite dish to serve and how they would sell it. Same with cocktails.
