Truly terrible work environment. Lots of drinking. So emotional and manipulative environment— constant negativity. Watched so many people manipulated, fired or quit! Management are the worst kinds of people to have power.
You’ll meet people from all over with vastly different backgrounds.
You’ll see different business’ operate under one roof and be exposed to different teams.
It is always busy, which is great for getting in your ‘reps’ in the kitchen.
They care about the details.

Sad amount of food waste on a daily basis.
The leadership is very poor with a demeaning morale. Several cooks are quite unhealthy, it seems to be a breeding ground for cancer. There is a lack of confidence overall among staff, both in the front and in the back.
Unorganized ordering systems and overall structure when it comes to prep.
Gossip culture. It drains energy.
It is a swearing kitchen.
This place is a great entry way to the Michelin world. By no means is it easy. But if you want to learn the basics of real fine dinning this is a great spot and it will allow you to push yourself.

The people (like most fine dining establishments) are quite insane…
Managers pick favorites. People get physical. People are real adult bullies & get away with it (even though management is fully aware of certain peoples behavior). You are NOT allowed to make mistakes. You will get sent home if you break a glass. You will get yelled at by the general manager if you don’t perform well one night. It’s very intense for what they pay you and the amount of work you are expected to do. But the group as a whole is slightly cultish & everything little thing is a huge deal. Management does not hold themselves to the same standards as they hold their staff.
