Pros

The owners are very organized. Food is high quality and great tasting. The ambiance and decor are very well thought out and put together. The kitchen and front of house generally get along well, due to the tip pool system. There are many bottled and canned beers available. The vibe is casual and the dress code isn't stuffy. No reservations are taken, so you don't have to deal with any of that getting complicated. Steps of service are fairly simple.

Cons

The tip pool 50/50 front and back of house makes it so you have to work very hard to earn as a server what you could at most any other restaurant with much less effort. It is fast paced and can be stressful. The owners do not offer raises to servers. The owners also barely care to hire good managers so when the owners aren't around, the organization falters and there is a lack of cohesiveness which adds to the stress of the environment. In the last year, the owners have made the choice to be there as little as possible, which puts the staff at the mercy of questionable management, even though expectations for staff to cut labor and be efficient remain high. The owners also put significant pressure on the management to uphold their high standards, yet do not offer adequate support or compensation for management. This leads to mangers burning out or becoming resentful very quickly, with high turnover in management. The chef is very prideful and stubborn and refuses to listen to any contradicting opinion or advise, which is typical of chefs, but anywhere else the tips would make up for it. The owners and chef don't care about the wellbeing of the staff and treat people like human capital, rather than human beings. They can also tend towards being petty and making work matters personal, starting vendettas against staff who bring up issues, and gossiping about employees to other employees. No wonder they say "experience required" in their job postings... anyone with experience would realize that this setup is not worth the money.
