The cons I experienced working for Hilton were mostly associated with my direct managers, so they can't really be applied to the company as a whole.
Management is almost always changing, as promotions are quite common. In the 2 years I spent in my first role with Hilton, I had about 7 different direct managers. Some I liked, and some weren't so great. I ultimately left that particular role and property with several other employees because the new manager was not working out for us. But again, that only pertains to that particular experience.
Also, be sure to fight for your annual raise. Each year, you are reviewed and "graded" on your job performance. Your raise is then a reflection of that score. If you don't agree with your scored, fight it and see that you get the raise you deserve.
